Yam and carrot broth​:yum::carrot::stew:

Ingredients

  • 2 medium yams, peeled and cut into cubes
  • 2 medium carrots, peeled and cut into cubes
  • 4 slices of bacon, chopped
  • 1 medium onion, chopped
  • 2 cloves of garlic, chopped
  • 4 cups of vegetable broth or water
  • 1/2 cup of cream (optional)
  • Chopped parsley to taste
  • Salt and black pepper to taste
  • Olive oil for sautéing

Preparation
Heat a dash of olive oil in a large pan and fry the bacon until golden and crispy.

Remove and set aside. In the same pan, sauté the onion and garlic until soft. Add the yam and carrot and sauté for a few minutes. Add the vegetable broth.

Season with salt and pepper and cook for about 25 minutes until the vegetables are very soft. Blend the soup in a blender or with a mixer until you get a velvety cream.

Return to the pan, add the cream if desired, heat again for a few minutes and finish with chopped parsley and the reserved crispy bacon. Serve hot.
